Green Eggs and Ham

Would you eat them in a box?
Would you eat them with a fox?

These cute green eggs & ham cups may get your kids to eat their spinach!

5 oz box frozen creamed spinach, thawed
12 thin slices deli ham
12 medium eggs (large eggs are too big)


Place one ham slice into each muffin cup.


Scoop a spoon full of thawed spinach into each ham cup.


Crack one egg into each cup and bake in a 375 degree oven for 14-17 minutes or until desired doneness.


You can even scramble the eggs before pouring into ham cups if you prefer.


Serve with fruit of choice.

I was feeling extra silly when I put this plate together. :)
