West African Chicken Soup (Mafe)
adapted from a variety of recipes
- 1 c. Chicken Breast, diced
- 2/3 c. Onion, diced
- 1 1/2 tsp. Garlic, minced
- 2 Tbs. Sesame Oil
- 1 1/2 tsp. Curry Powder
- 1/2 tsp. Salt
- 1/2 tsp. Pepper
- 1/2 tsp. Dried Red Pepper Flakes
- 3 c. Chicken Broth
- 1/4 c. Tomato Paste
- 1/2 c. Chunky Peanut Butter
- 1 qt. canned tomatoes
- 1 tsp. Thyme
- 2 Bay Leaves
Serve over steamed rice.
