West African Chicken Soup (Mafe)


adapted from a variety of recipes
  • 1 c. Chicken Breast, diced
  • 2/3 c. Onion, diced
  • 1 1/2 tsp. Garlic, minced
  • 2 Tbs. Sesame Oil
  • 1 1/2 tsp. Curry Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1/2 tsp. Dried Red Pepper Flakes
  • 3 c. Chicken Broth
  • 1/4 c. Tomato Paste
  • 1/2 c. Chunky Peanut Butter
  • 1 qt. canned tomatoes
  • 1 tsp. Thyme
  • 2 Bay Leaves
In a large pot, saute the chicken, onion and garlic in the sesame oil until the onion is tender. Add the curry powder, salt, pepper and red flakes and saute 1 minute more. Add the chicken broth, tomato paste, stewed tomatoes, thyme and peanut butter stirring until well combined. Add bay leaves and heat until very hot but not boiling.

Serve over steamed rice.
